It’s holiday season! Be it Christmas or New year’s everyone has got an occasion to celebrate every December. Afterall it’s the end of another year and that deserves a celebration in itself 😀 Sharing with all of you a recipe you all can make this December. Blueberry Banana muffins 🙂
Now, in the last few years I’ve discovered that I love making desserts, even much more than eating them. I do get the occasional craving for something sweet, but that’s about it. The thing is I just really like baking desserts or finding innovative ways to prepare them. it’s so much fun and gives me a different kind of satisfaction once I’m done preparing something sweet. So, I racked my brains, wanting to prepare something new yet not very complicated and came up with this recipe.
These muffins are very easy to prepare, good to taste and quite healthy as well, because they contain reduced sugar and less white flour (maida). They are completely vegan, no dairy, no eggs. (You can modify the ingredients if you wish to). They are fluffy and well cooked.
The best part is, if you don’t have a muffin pan or an oven, you can prepare them without it!
So without much delay, let me go ahead with sharing the recipe and procedure with you all.
- All purpose flour (maida) half cup.
- Oat flour (Grind oats in a mixie till it forms a flour to make oat flour) 1 and half cup.
- Dates. About 5-6. Depends on preference.
- Blueberries. 8-10 Again, depends on preference.
- 2 bananas. Would suggest using 2 to get the right flavour.
- Soy milk. 1 to 2 cups. (you can use normal dairy milk or any other like coconut milk. Upto you.)
- 3-4 tablespoons sugar. Vary according to your need.
- Baking soda. about 1 teaspoon.
- In a mixie, first prepare the oat flour. Grind it till it has a flour like consistency. Then in a bowl, mix the oat flour and all purpose flour together. Keep aside.
2. Now separately in the mixie, grind together the bananas, blueberries and dates, till it forms a paste.
Now mix the paste and the flour together. Add sugar and mix it well. Add fresh whole blueberries to it as well if you wish. I would suggest you add the whole ones, will enhance the flavour quite well.
Keep adding the soy milk as required, in between. to make the batter runny. Batter should not be very thick, it should be a little runny so that the muffins come out well.
Add the baking soda. Let the batter sit for 10 mins, until you see the bubbles rise.
Now stir the batter a bit if you wish (Strictly in one direction only, else the baking soda will not show effect)
Check for consistency again. Line your idli pan/rack with a bit of oil or butter and pour the batter in an idli pan/ idli rack.
Fill as many idli racks as you wish to.
Now pre-heat the pressure cooker. Add around half cup of water. Just heat it for 5-7 mins.
Now add some more water inside the pressure cooker, around say 1 to 1 and half cups.
Place your idli rack(s) inside the cooker.
Close the lid of the cooker
Remember to remove the whistle. Do not use the whistle of the cooker.
Now first, keep the flame on high for initial 5 mins, then keep it to medium for the next 10 mins and then keep it to low for the next 10-15 mins. Total time taken should be about 30 to 40 mins max.
You can open your cooker and see after 30 mins whether your muffins are done or not. In case not done, steam on low flame for another couple or minutes.
Once your muffins are done, they will fluff and rise up and start opening from above and batter color will change. And of course they will smell heavenly!
You can insert a toothpick or a small knife and check whether batter is sticking to it or not. If not, your muffins are ready! If it sticks, then you need to cook it just a bit more.
So that’s it!! Your freshly prepared muffins are ready to eat. Straight out of the kitchen
You can top them with more blueberries and prepare any icing if you need to.
I have just made a blueberry yogurt mixture as topping, for asethetic purposes, rather than taste.
We ate our muffins just like that. Muffins are anyway supposed to be without much icing, else they are called cupcakes 😀
So that was my Blueberry banana muffin recipe. If you don’t get the blueberries you can skip adding them. (I know finding them is tough in India. ) Maybe just use the banana and dates and I am sure they’ll be as tasty.
If you have an oven and a muffin pan, you can prepare them in those.
